I was very skeptical when I was attracted to this wonderful recipe for taquitos. As you know, taquitos are a small fried Mexican burrito type thing. I was skeptical because baking is never as good as deep frying. I shouldn't say that. Lots of things are good baked, but baking things that should be fried just are not the same. So, I gave it a try , and it was a success so I am sharing. BTW-I don't share my cooking failures. I don't want to waste my valuable blog space or your valuable time.
In a saucepan, melt 2T. of butter. Once melted add 1t. of garlic powder and 1t. of Mrs. Dash or your favorite combo-of spices. Mix and then add an 8oz. brick of cream cheese. Melt completely and add 1/3 cup of Franks Hot Sauce(although any Buffalo flavored sauce would work). Mix well, then add 1/3 cup of milk. Then add 4 cups of cooked chicken. I used breast meat from one of those pre-cooked whole chickens since I didn't have a ton of time. Finally spoon some of the mixture into each of your tortillas, a package of 10 will be perfect. Roll each one tightly and brush both sides with vegetable oil. Bake at 425 for 15 minutes, turning every 5 minutes.
Not only were these just as crispy as a fried version, they were MORE delicious. There is just something about the taste of buffalo sauce that makes my mouth water. I served them with a dollop of sour cream and a little pineapple salsa (Trader Joes is my fave). I had a couple for left overs today and the taste was still amazing, however they were a little limp for my liking. Let me know what you think!
